This Instant Pot chickpeas recipe required no soaking overnight. So if you are like me, always forgets to soak the chickpeas ahead of time, this recipe is for you. This method is absolutely fool-proof and makes perfectly soft chickpeas - salted or unsalted - however you like. They are good on their own or for hummus, soups, curries, however you'd like to use them in recipes.
Crockpot is my savior when it comes to making beans and grains. I am so bad at prepping stuff or planning things ahead of time. So whenever I want to make chickpeas, black beans or any grain/bean that takes a long time to cook without soaking, I use my instant pot for that. It usually takes about 45minutes (about 50 minutes if the chickpeas are larger), plus the time for the pressure to release naturally.
The recipe I've given here is very basic. I only use salt. But if you'd like to add more flavor, you can add other types of seasonings, flavorings and herbs depending on what you are planning to make. My favorite is to add a couple of bay leaves, a clove of garlic and some peppercorns. You can also add some cumin or coriander seeds, garlic or onion powder, some lemon peel (great if you are planning to make hummus).
Soaking chickpeas cut down the cooking time by a lot! So if you can plan ahead, maybe next time cook it with soaked chickpeas. The method is very simple.

The easiest most-foolproof method to cook Chickpeas in the Instant Pot without soaking. They turn out perfectly cooked every time, ready to enjoy on their own or to use in any recipe that needs cooked or canned chickpeas.
Add the dried chickpeas to a colander and rinse them.
add the chickpeas into the instant pot. Also add measured water (1 cup chickpeas : 3 cup water ratio) and salt.
Close the lid. Make sure the lid is at the sealed position. Press 'pressure cook' button. Adjust the pressure to 'High'. Adjust the time to 45 minutes. Press 'Start'.
When the pressure cooker is done cooking (It will beep 10 times and will change to warm function), press 'Stop' to turn off the instant pot. Let it release the pressure naturally (do not release the pressure using the knob on the lid).
When the pressure is fully released (the little silver knob on the lid will go down once the pressure is released), open the lid. Check the doneness of the chickpeas. Drain the liquid (this liquid is called aquafaba and can be used in recipes). Enjoy!
