I am a HUGE fan of crispy skin on salmon, and this is the simplest, most foolproof recipe I have tried so far. This method has never failed me. You just need a frying pan, oil, parchment paper, and seasonings of your choice (I just use salt and pepper). You won’t believe how easy this is!
I’ve tried many methods to achieve the perfect crispy salmon skin but this is the one I’ve found the easiest. Until then, I used a stainless steel skillet and fried the salmon skin side down with a very thin coating of oil. I can get a crispy skin this way too but the problem I was facing was the skin sometimes stick to the pan. Or the skin detaches from the salmon piece. I like this new method because I don’t have to worry about the salmon skin sticking to the pan anymore.

What you’ll need:
- a frying pan
- a piece of parchment paper
- cooking oil
- Salt and pepper or any seasoning of your choice
- A lemon or lime wedge to serve the salmon with (optional)
Key Steps for Crispy Skin Salmon
- First, wipe the salmon pieces with paper towels to remove any excess water. This is very important. Dry out the skin very well.
- Then salt all sides of the salmon, but don’t let it sit for too long after being salted, cause salt draws out moisture and makes it less crispy.
- Make sure to oil the pan before you place the parchment paper, so it sticks better to the pan, which is necessary for even heat conduction. Also make sure to add oil over the parchment paper as well. Oil helps to fry the skin.
- Do not turn the salmon pieces too much. Place the salmon skin side down and leave it for about 4 – 5 minutes until the skin is brown and crispy. Then you can turn it and cook the other sides.
- Make sure to serve it skin side up. I’ve seen many people make this mistake. Otherwise the juices that come out and the steam can make the skin soggy.
Checking the doneness of Salmon
I usually use an Instant Thermometer for this. The salmon is done when the internal temperature reaches 135F.
Serving ideas with Salmon with crispy skin
Since crispy skin salmon is already really flavorful, you can pair it up with something simple. I usually like it with some steamed broccoli, roasted veggies, sauteed green beans or a nice green salad. If I feel fancy, I also like to make a simple lemon butter sauce to go with it. You can also serve it over jasmine rice or yellow rice with some cucumbers, carrots, edamame and more veggies to make a rice bowl. And then top it with some lemon dill sauce to make it extra special.
